Isolation and characterization of lactic acid bacteria from fermented ayran using the traditional method in local families of the Zhetysu region.

Life in Zhetysu is directly related to agriculture. Local people have maintained a long tradition of using milk through traditional fermentation. Ayran is an old traditional drink of the Kazakh people. The microbial structure of ayran, traditionally fermented in local families of the Zhetysu region, has not yet been fully studied. Lactic acid bacteria are known as yeast, which naturally occupy an important place in fermented milk products. Obtaining local strains of lactic acid bacteria is of great importance to improve the safety and quality of this traditional dairy product. Also, the main news of the project is laying the foundation for the formation of a resource fund of lactic acid bacteria, first isolated from traditional dairy products in Zhetysu.

Project goal:

Within the framework of this project, to isolate lactic acid bacteria from ayran samples collected from local families living in several districts of the Zhetysu region, as well as to carry out identification work using traditional and molecular genetics methods.

Expected results:

1. obtaining 10 strains belonging to at least 2 types of lactic acid bacteria;

2. publication of one scientific article based on COKES based on the results obtained.
